Waldorf Chicken Salad
A large part of my 70/30 Plan is creating versatile meals that can last 3-4 days so you have healthy options throughout the week. I love making foods that you can use a variety of different ways as it helps maintain a healthy diet for busy schedules. Take for instance my Oven Roasted Chicken recipe. From this, you have the chicken to use in recipes throughout the week (like this Waldorf ChickenSalad) as well as the chicken carcass to make a nourishing broth that helps support gut health and use this in various base soups recipes.
As part of the plan, I love making large salads like the one here and having it on hand throughout the week. The trouble is that usually it never lasts that long! I end up making them and then they are so delicious I eat the whole thing in one day! At least that is what happened with my Carrot, Kale & Raisin Salad salad! Oh well ;) They are so easy to make and assemble as the key ingredient is my homemade mayo that is incredibly simply and full of good quality fats!
These kinds of salads are excellent to have on hand because they work well for any meal of the day or just nice to have when you need a snack. You can throw in with mixed greens for an easy salad or along side chicken or even is great as-is!

INGREDIENTS
- 2C roasted chicken
- 1C homemade mayo
- 1C purple grapes, sliced
- 3-4 celery stalks, chopped
- 1/2C apple, chopped
- 1C walnuts, chopped
- 1tsp sea salt
- Combine all ingredients into a bowl and mix well.
- Serve on top of cassava flour pitas, mixed greens salad, or eat as-is!
