Turmeric & Honey Glazed Chicken with Cucumber Yogurt Sauce
This is my take on the traditional tandoori chicken which is usually made with aromatic spices like turmeric and ginger blended together with yogurt. In this recipe, I separated out the yogurt into one of my favorite sauces to serve alongside the chicken. This sauce is so versatile and can be used with many dishes, especially with grilled veggies and any grilled meats or fish. I also love it as a dressing on salads!
This sweet and savory chicken dish is another meal prep favorite as you can make a little extra and then incorporate into various recipes throughout the week. I also used this marinade for a whole chicken and then oven roasted the chicken (pictured below) and used the carcass in a bone broth later which was incredibly delicious!

INGREDIENTS
Turmeric & Honey Glaze Marinade
2LBS chicken thigh
2-3 cloves garlic, chopped
3TBS olive oil
1tsp turmeric
1/2 tsp sea salt
1tsp ginger
1TBS honey
1/2 lemon, juice & zest
Combine all ingredients with chicken in a bowl, toss until well coated
Refrigerate and allow to marinate 30 minutes to 1 hour
Grill on medium heat roughly 5-7 minutes each side, depending on size of chicken thighs until cooked thoroughly
Cucumber Yogurt Sauce
1C Greek yogurt
1 chopped cucumber
2 chopped garlic cloves
Lemon zest
Juice 1 lemon
2TBS dill
1TSP sea salt
Combine all ingredients in bowl an mix until well combined.
