Casseroles are one of my most favorite comfort foods which also happen to be incredibly simple to make. I love recipes where you just throw a bunch of things together in a pot, let it cook, and it turns out delicious! I made this recipe with leftover turkey from Thanksgiving and turkey bone broth I made with the carcass. You can also make variations of this recipe to your liking. For instance, instead of noodles you can always use wild rice or even potatoes and instead of heavy cream you can use coconut cream.
For this recipe, I found some wonderful artesian whole grain pasta from Italy which was non-GMO and organic. Often times grain sensitivities can be due to the chemicals, herbicides and pesticides used in the production of grain so I always encourage people to try to find better quality grains if possible. Sometimes it can help finding ones that are sourced from overseas as they generally have better farming practices. If that is not available, you can substitute a pasta alternative, just be sure to check the ingredients so that it’s not heavily processed. INGREDIENTS
1-2TBS grass-fed butter
2C whole grain noodles (or choice of noodles), cooked
2C carrots, chopped
1/2c peas
2C broccoli, chopped
1 1/2C mushrooms, chopped
1/2C leeks, chopped
2 cloves garlic, chopped
1/4tsp sea salt
1/8tsp black pepper
1TBS oregano
1/4tsp thyme
1tsp basil
1/2C heavy cream
1C turkey bone broth (or broth of choice)
1-2C shredded turkey (or chicken)
1 1/2C shredded cheddar cheese
Preheat oven to 350*F.
Melt butter in large pot over stove. Once melted, add veggies and seasoning and saute for a few minutes until veggies begin to sweat.
Add broth and cream and bring to a boil, then reduce to a simmer until veggies become soft but still firm.
Add turkey and mix well.
Add cheese and toss until cheese is evenly distributed throughout casserole.
Remove from heat and place in oven, covered, for about 10 to 12 minutes.
Remove from oven and top with extra shredded cheese and a little extra seasoning if you choose (sea salt, pepper, oregano). Then place back in the oven, uncovered, for about 5-7 minutes until cheese is melted.
Remove from oven and serve!
