Sweet Corn Soup

The perfect summertime soup and transition to fall recipe when fresh sweet corn is in season. You know I love a good blended soup, too! I call them predigested, meaning everything is cooked and blended together, so much easier on the gut to digest. Plus, I make them with bone broth, so they are great for helping support a healthy gut lining and reducing belly discomfort. Watch me demo this recipe on Instagram!

INGREDIENTS

  • 2 TBS butter

  • 1 TBS olive oil

  • 1C fresh sweet corn, shaved

  • 1 medium white sweet potato, peeled and roughly chopped

  • 1 sweet onion, roughly chopped

  • ½ tsp sea salt

  • ½ tsp black pepper

  • 1 TBS oregano

  • 1 5.4 oz can coconut cream

  • 4-6 C bone broth

  1. Melt butter and oil in a pan.

  2. Saute veggies with seasonings.

  3. Add broth and coconut cream.

  4. Bring to a simmer until veggies soft and can easily be pierced with a fork (about 20 minutes).

  5. Blend with an immersion blender until smooth. Enjoy!
