If you’ve been following me on Instagram, you might have noticed in my stories that I am a big fan of my weekly CSA from my favorite local farm, Field to Fork. CSA stands for Community Supported Agriculture where you basically buy a share in a local farm and each week reap the incredible benefits of the bountiful harvests. I highly recommend signing up for a CSA near you and shopping directly from your local farmer as not only are you helping support local businesses, but generally the produce is much better quality, more tasty, and more nutrient dense.
This week in my CSA, I received spaghetti squash, tomatoes, onions, and these super cute baby gem lettuces which are similar to a romaine. I basically had all of the fix-ins for a Mexican inspired spaghetti squash bowl that turned out so delicious! These are super easy to make and even easier to customize to your liking. For instance, you can play around with adding in ground turkey sausage or perhaps even topping with pulled pork. Maybe even subbing the meat for mashed avocado and sauteed peppers for a veggie packed dish. Either way, I am sure you will love this tasty and simple recipe! Enjoy!
INGREDIENTS
1LB chorizo
1 spaghetti squash
1/4c black olives, sliced
2 medium tomatoes, diced
1 small white onion, diced
1 lime
4TBS cilantro, finely chopped
1/2tsp sea salt
1TBS oregano
1/2C gem lettuce (or romaine), chopped
1/2C cheddar cheese, shredded
Preheat oven to 375*F.
Slice squash lengthwise down the center and scoop out any seeds (I like to rinse, dry, and coat seeds with oil. Lightly season the seeds then roast in the oven for a yummy snack!)
Fill a baking dish with 2-4 inches of water and place squash face-side down in pan.
Roast for about 30 minutes until tender.
Meanwhile, brown chorizo in a skillet. Set aside.
Prepare the pico de gallo by combining tomatoes, onion, lime juice, cilantro, salt, and oregano to a bowl. Mix until all incorporated.
Remove squash from oven, allow to cool, and begin to scoop out inside of one half with a fork.
In the other half of the squash, begin to layer spaghetti squash, chorizo, and cheese then pop in the oven for a few min until cheese is melted.
Top with pico then garnish with lettuce, cheese, and olives. Enjoy!
