Southwestern Butternut Squash Kale Salad

INGREDIENTS

  1. 4C dino kale, finely chopped

  2. 2C butternut squash, cubed

  3. 1 chicken breast, grilled

  4. 2 peppers, chopped

  5. 1/2c black beans

  6. 1 corn, grilled, shaved

  7. 1C cherry tomatoes, sliced

  8. 1 avocado

  9. 4TBS olive oil

  10. 1tsp sea salt

  11. 1tsp chili powder

  12. 1/4tsp black pepper

  13. Pinch of cinnamon

  14. Cheese

  15. Ranch dressing (drizzle)

  1. Preheat oven to 400*F.

  2. Combine butternut squash with oil, chili powder, pepper, salt, and cinnamon.

  3. Roast in the oven for 15 minutes, remove from oven and stir, then place back in oven for another 15 minutes.

  4. Add finely chopped kale to bowl then add remaining fix-ins.

  5. Drizzle with dressing and devour!
