Ginger Maple Roasted Pumpkin Seeds

If you love ginger like me, this is a must-try recipe. I can barely put it down. To make it, I chopped dried ginger, then grated fresh ginger, and combined these ingredients with pumpkin seeds, maple syrup, and coconut oil. Mix until well coated, then spread everything out evenly on a baking sheet and toss it in the oven. Remove from oven, allow to cool, and enjoy! Watch me demo on Instagram!

INGREDIENTS

  • 1C pumpkin seeds

  • 1/4C dried ginger, chopped

  • 1TBS ginger, freshly grated

  • 2TBS coconut oil

  • 2TBS maple syrup

  1. Combine all ingredients in a mixing bowl until well-mixed.

  2. Spread the mixture evenly on a baking sheet lined with parchment paper.

  3. Bake at 350*F for 10-12 minutes. Stirring half way through to prevent burning.

  4. Remove from oven and allow to cool so everything hardens up and sticks together. Break apart and enjoy!
