Creamy Beet & Dill Salad

INGREDIENTS

  • 3C beets, roasted & chopped

  • 2TBS dill, chopped

  • 1TBS oregano, chopped

  • 1TBS chives, chopped

  • 1/2C fennel, finely chopped

  • 1 shallot, thinly sliced

  • 1/4C creme fraiche

  • 1/4tsp sea salt

  • 1/4tsp celery seed powder

  • 3TBS olive oil

  1. Combine creme fraiche, sea salt, celery seed powder, and oil in a mixing bowl and whisk until well combined.

  2. In a large mixing bowl, add beets, dill, oregano, chives, fennel, and shallots then toss with dressing until everything is well coated.

  3. Serve and enjoy!
