Creamy Beet & Dill Salad
INGREDIENTS
3C beets, roasted & chopped
2TBS dill, chopped
1TBS oregano, chopped
1TBS chives, chopped
1/2C fennel, finely chopped
1 shallot, thinly sliced
1/4C creme fraiche
1/4tsp sea salt
1/4tsp celery seed powder
3TBS olive oil
Combine creme fraiche, sea salt, celery seed powder, and oil in a mixing bowl and whisk until well combined.
In a large mixing bowl, add beets, dill, oregano, chives, fennel, and shallots then toss with dressing until everything is well coated.
Serve and enjoy!
