INGREDIENTS
1LB chorizo
1LB ground pork
3 cloves garlic, minced
1 duck egg (or 2 chicken eggs)
1/2tsp red pepper flakes (optional for a little added heat)
1/2tsp sea salt
1/4C almond flour
1TBS basil
1TBS oregano
2TBS grass-fed butter
3-4C marinara sauce
Preheat oven to 325*F and line a baking sheet with parchment paper.
Combine all ingredients (except butter and marinara) into a mixing bowl until thoroughly mixed.
Form tiny meatballs and place on baking sheet about 1/2 inch to 1 inch apart.
Bake for about 25 minutes then remove from oven.
In a large pot, melt butter and over medium heat, fry the meatballs until each side is golden brown (about 2-3 min each side).
Add marinara sauce and bring to boil then immediately reduce to simmer for about 8-12 minutes until meatballs are cooked thoroughly.
Serve garnished with Parmesan cheese and parsley or alongside spaghetti squash. Enjoy!
