Cherry Salsa
I feel pretty blessed to live in the heart of the Grand Valley and have access to some of the tastiest Colorado cherries! I am always eager to use cherries in any way possible when they’re in season, like my delicious Cherry Pie Crumble that is not only as good as cherry pie, but also is great with Homemade Yogurt or mixed in oatmeal. My Cherry Salsa is the perfect dip or topping to any salad, burger or taco. It also goes well with my Spicy Kraut Slaw and any protein of choice. Feel free to change the ingredients to your liking. For instance, if you want a less spicy version you can omit the jalapenos or for added spice you can even toss in some red pepper flakes. Enjoy!
INGREDIENTS
1 1/2C Bing cherries, chopped
1 can fire roasted diced tomatoes
1TBS jalapeno, chopped
1/4C cilantro, chopped
1/4C Vadilia onion (or sweet onion), chopped
1 lime, juice + zest
1/2tsp sea salt
1TBS oregano
Combine all ingredients into a large mixing bowl and toss until thoroughly mixed.
Serve on top of salads, burgers, tacos, or with a cassava flour pita chip (pictured below)
