Buttered Peas & Leeks

Sometimes the simpler the recipe the better! Eating healthy does not have to be difficult and does not have to be tasteless, almost everything cooked in a good quality cooking fat seasoned with sea salt is amazing. For this recipe, I sauted peas and leeks and topped with a little Parmesan cheese to taste, making the perfect side dish or fix-in for salad. Having recipes like these handy are great for meal prepping for the week ahead. Also, this recipe takes about 10 minutes to make so for those evenings you’re coming home from work late or don’t know what to make, keep this recipe handy!

INGREDIENTS

  • 2-4TBS grass-fed butter

  • 2C frozen peas, thawed

  • 2 leeks, thinly sliced

  • Parmesan cheese

  • 1/4tsp sea salt

  1. Melt butter in a large pan and add leeks, sauté for 5-7 minutes until softened.

  2. Add peas and salt and mix well.

  3. Remove from heat and transfer to serving dish, topped with Parmesan cheese.
