Butter Bark Bites
I absolutely love these little guys! They are the perfect snack or sweet treat and are also wonderful in helping to maintain energy levels throughout the day. In my series 3 Simple Ways to Better Health, I described eating fat as one of the best ways to help maintain maintain stable blood sugar levels throughout the day. Fat does not make you fat! In fact, it is the body's preferred source of energy! So, make these Butter Bark Bites and have on hand for when you need a little boost of energy. My favorite is the Monkey Bark (chocolate-almond butter-plantain chip)...tastes like a Reese's!!
INGREDIENTS
- 1/2 C Butter
- 1/3 C Coconut Oil
- Melt butter and oil and pour into a loaf pan lined with parchment paper.
- Add desired toppings and place into freezer until well formed.
- Break apart with knife.
For the Monkey Bark, add:
- 1/3 C Softened Almond Butter
- Handful of Crushed Plantain Chips
- Drizzle of Honey
For the Macadamia Bark, add:
- Handful of Crushed Macadamia Nuts
- Toasted Coconut Flakes
- Drizzle of Honey
For the Blueberry-Almond Bark, add:
- Dried Berries
- Sliced Almonds
- Coconut Flakes
- Couple drops of Almond Extract
- Drizzle of honey
