Broccoli Bacon Salad
I am a big fan of making large salads like these and having handy for the next couple days as they’re simple to make and perfect for meal prepping. Plus, these salads are a great way to get a lot of fiber into your diet which helps support optimal gut health!

INGREDIENTS
2C broccoli, chopped
1 red pepper, chopped
4 radish, chopped
1C bacon, chopped
1/2C peas, thawed
1/2C tomatoes, sliced
1/2C homemade mayo
1/2c cashews, chopped
1/4tsp sea salt
1/3C olive oil
1 lemon, juice + zest
Combine all ingredients into a mixing bowl and toss until ingredients are evenly coated and mixed. Enjoy!
