Beet & Pomegranate Salad
INGREDIENTS
4C arugula, loosely packed
2C steamed/cooked beets, chopped
1 Bartlett pear, thinly sliced
1/4C walnuts
1 pomegranate, seeds removed
5 dates, chopped
3TBS olive oil
Pinch finishing sea salt
Balsamic vinegar glaze, to taste
Feta cheese, to taste
Combine all ingredients in a bowl and toss until well coated. Enjoy!
