Beet & Pomegranate Salad

INGREDIENTS

  • 4C arugula, loosely packed

  • 2C steamed/cooked beets, chopped

  • 1 Bartlett pear, thinly sliced

  • 1/4C walnuts

  • 1 pomegranate, seeds removed

  • 5 dates, chopped

  • 3TBS olive oil

  • Pinch finishing sea salt

  • Balsamic vinegar glaze, to taste

  • Feta cheese, to taste

  1. Combine all ingredients in a bowl and toss until well coated. Enjoy!
