Basil Arugula Pesto 

Pesto is amazing and goes with everything! I love having it on hand (if it ever lasts that long..) to spread on toast, use as a marinade for chicken and fish, mix in with ground beef to make meatballs, as a dressing in a salad, or just as a simple dip for veggies…the possibilities are endless! The pepper flavor from the arugula adds a lot of great flavor, I know you will love this simple and delicious recipe! 

INGREDIENTS

  • 4C Basil

  • 1 1/4C Fresh Arugula

  • 3 Cloves Garlic

  • 1/3C Brazil Nuts (or any kind of nut; cashew or pine nuts work great as well)

  • 1/2C Grated Parmesan Cheese

  • ¼ TSP Sea Salt

  • ¼ TSP Lemon Zest

  • 4TBS Bone Broth (I used chicken)

  • Juice ½ Lemon

  • 1/4C Olive Oil

  1. Combine all ingredients into blender and blend on medium, stopping to stir occasionally, and continue to blend until well mixed.
