Apple Cider Vinegar Shooter
Apple cider vinegar has a number of healing benefits, especially as they relate to the gut. For instance, it can be helpful in disrupting biofilms, or essentially digestive plaque, that acts as a protective barrier to the pathogenic organisms in the gut. It also can be helpful in boosting digestive enzymes which are essential in breaking down foods properly. Rather than just drink plain apple cider vinegar which can sometimes be too acidic, I mix it in with lemon juice, ginger juice, and sparkling water then rim the glass with coconut sugar and honey so it becomes this sweet and tangy effervescent “shooter” that is nice to sip on before, during, or after meals.
I created this recipe for my Summer Dinner Series dinner with my friends at the Modern Eater Show in Denver. I put together a 5-course gut healthy dinner and this shooter was what we started off with to jump-start our digestive enzymes. Feel free to get creative with this recipe and perhaps even add in some kombucha or various juices for added flavor. It makes a great mocktail for a holiday party, too! Cheers!
INGREDIENTS
Apple cider vinegar
Lemon juice
Ginger juice
Honey
Coconut sugar
Sparkling water
Combine vinegar and juices into a jar to your liking and mix. For one 6-8 oz glass, I generally use about 1/4C vinegar, 1/4C lemon juice and 2TBS ginger juice then the remainder fill with sparkling water.
Pour mix into shot glasses or small cups.
Fill about half way full then top with sparkling water.
To rim the glasses, pour a few tablespoons of honey onto a plate. Next, dunk the rim of the glass into the honey so it is well coated.
Finally, pour a little sugar onto a separate plate and dip the rim of the glass into the sugar so that it coats the entire rim.
